Function |
The machine rests on a rolling metallic structure and comprises a hopper equipped with a handle at the rear and an exit at the front. A metal plate held in place by jacks enables pressure to be maintained on the contents of the hopper. The verification mechanism is located on a tower on the top. These cheese presses are experimental ones, designed specifically for experimental cheese of between 5 and 40 kg. The curd inside the pressure vats is transported to the presses via a tube. Inside the press, the curd is first drained for a few seconds and then pressed. The lactoserum or whey produced by this process is recovered in reception vats. They were designed by the INRA for research purposes |
