These cheese presses are experimental ones, designed specifically for experimental cheese of between 5 and 40 kg. The curd inside the pressure vats is transported to the presses via a tube. Inside the press, the curd is first drained for a few seconds and then pressed. The lactoserum or whey produced by this process is recovered in reception vats. They were designed by the INRA for research purposes |
